I’m going to be honest with you.
The first time you see this recipe, it looks like someone accidentally put a smoothie in a blender and decided to call it ice cream.
Then you make it.
And suddenly you have a massive bowl of thick, fluffy ice cream sitting in front of you.
The crazy part? The ingredients are ridiculously simple.
No heavy cream. No mountains of sugar. No complicated ingredients that require a chemistry degree.
Just fruit, protein powder, ice, a little liquid and one very useful ingredient: xanthan gum.
And yes, the amount of ice is completely ridiculous.
That’s kind of the point.
What Is High-Protein Anabolic Ice Cream?
This is essentially a high-volume, protein-rich version of ice cream designed to give you a huge portion for relatively few calories.
Traditional ice cream gets much of its calories from ingredients like cream and sugar. Here, we’re taking a different approach.
Instead of making a small portion incredibly calorie-dense, we’re using ice and air to create a much larger serving.
So you can sit down with what looks like an entire tub of ice cream and not immediately wonder if you’ve just ruined your diet.
It’s a pretty good deal.
Ingredients
For one very large serving, you’ll need:
- 105 g frozen fruit — strawberries or blueberries work particularly well
- 45 g protein powder
- 100–115 g unsweetened almond milk or water
- 350 g ice
- 1 teaspoon xanthan gum
- Sweetener, to taste
You can also add vanilla extract, cocoa powder, PB2, or a little zero-calorie syrup depending on what flavor you’re going for.
But don’t overcomplicate it at first.
The basic version already works.

How To Make It
1. Put everything in the blender
Add your frozen fruit, protein powder, liquid, ice, xanthan gum and sweetener.
At this point, you’re probably going to look at the blender and think:
“There is no way this is becoming ice cream.”
Give it a chance.
2. Start blending
Blend everything until the mixture becomes thick, smooth and fluffy.
This can take a little patience because you’re dealing with a lot of ice.
If your blender needs help, stop it occasionally and scrape the sides down.
You want everything moving together.
3. Be careful with the liquid
This is one of the easiest ways to mess up the recipe.
If the blender is struggling, add a tiny bit more liquid.
Don’t pour in half a glass.
A little extra liquid can help everything blend. Too much liquid turns your beautiful ice cream into a protein smoothie.
And nobody wants to eat a smoothie with a spoon while pretending it’s ice cream.
4. Keep blending
The mixture should become extremely thick and fluffy.
That’s what you’re looking for.
Once you reach that point, you’re basically done.
No complicated freezing process.
No waiting three hours.
Just scoop it into a bowl and eat.
Why Does Xanthan Gum Matter?
This is the ingredient doing a surprising amount of work.
Xanthan gum is a thickening agent that helps give the mixture its creamy, stable texture.
Without it, you’re mostly going to have frozen fruit, protein powder and ice.
With it, the mixture can become much thicker and more ice-cream-like.
But don’t go crazy.
A teaspoon is enough for this recipe. Too much xanthan gum can give your ice cream a strange, overly gummy texture.
In other words:
A little = creamy.
Too much = edible glue.

Why Is There So Much Ice?
Because we’re playing the volume game.
The ice adds a huge amount of physical volume without adding significant calories.
When you blend it together with the other ingredients, the mixture becomes fluffy and expands considerably.
That’s why this recipe can produce a bowl that looks absolutely enormous.
And that’s also what makes it useful for anyone who likes eating a lot of food while keeping their calories under control.
Flavor Ideas
Once you’ve made the basic version, you can start experimenting.
Strawberry
Use frozen strawberries with vanilla protein powder.
Simple, fresh and probably the easiest version to get right.
Chocolate
Use chocolate protein powder and add a little unsweetened cocoa powder.
If you like chocolate, this one is hard to mess up.
Peanut Butter
Add some PB2 or another powdered peanut butter.
You get that peanut-butter flavor without needing to add a huge amount of actual peanut butter.
Chocolate Berry
Chocolate protein powder + frozen berries + a little cocoa powder.
This is probably where things start getting dangerous.
Not dangerous in the medical sense.
Dangerous in the “I was supposed to save half for tomorrow” sense.
Common Mistakes
Adding too much liquid
This is probably the biggest one.
Start with the recommended amount and only add more if your blender genuinely needs it.
Using too much xanthan gum
More doesn’t automatically mean better.
Too much can make the texture unpleasantly gummy.
Not blending long enough
You want the mixture to become smooth and fluffy.
Don’t stop while there are still large pieces of ice floating around.
Using fruit that isn’t frozen
Frozen fruit helps create the cold, thick texture you’re looking for.
Fresh fruit can work, but you’ll generally need to compensate elsewhere.
The Bottom Line
This recipe is basically a lesson in volume.
You’re taking a handful of relatively simple ingredients and turning them into a gigantic dessert.
You get protein from the protein powder, sweetness from the fruit and sweetener, and most importantly, you get a bowl of food that actually feels like a dessert.
Is it exactly the same as premium ice cream made with cream and sugar?
No.
But that’s not really the goal.
The goal is to make something cold, sweet, creamy, filling and ridiculously large without using a ridiculous amount of calories.
And honestly?
That’s a pretty good trade.
