This easy sheet pan quesadilla is a giant, crispy, cheesy family dinner made with flour tortillas, seasoned ground beef, melted cheese, crunchy tostadas and fresh taco toppings. It takes just a few minutes to assemble and makes an easy family-friendly dinner with minimal cleanup.
Cook the ground beef in a large skillet over medium-high heat until browned and cooked through. Drain excess grease if needed, then add taco seasoning and prepare according to the seasoning package directions.
Arrange 6 tortillas around a large sheet pan, overlapping them and allowing the edges to hang over the sides.
Sprinkle half of the shredded cheese over the tortillas.
Add the seasoned ground beef evenly over the cheese.
Arrange the tostadas over the beef.
Add the remaining cheese, diced tomatoes and shredded lettuce.
Place the remaining tortilla in the center over the fillings.
Fold the edges of the surrounding tortillas inward over the center tortilla until the entire quesadilla is enclosed.
Bake for about 15–20 minutes, or until the tortillas are golden brown and crispy and the cheese is melted.
Remove from the oven, let cool for 2–3 minutes, then slice into 6 portions and serve.
