Sheet Pan Quesadilla

This easy sheet pan quesadilla is a giant, crispy, cheesy family dinner made with flour tortillas, seasoned ground beef, melted cheese, crunchy tostadas and fresh taco toppings. It takes just a few minutes to assemble and makes an easy family-friendly dinner with minimal cleanup.

Ingredients
  

  • 7 large flour tortillas
  • 1 lb ground beef
  • 2 cups shredded cheese
  • 5 tostadas
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 packet taco seasoning
  • Salt & black pepper, to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cook the ground beef in a large skillet over medium-high heat until browned and cooked through. Drain excess grease if needed, then add taco seasoning and prepare according to the seasoning package directions.
  • Arrange 6 tortillas around a large sheet pan, overlapping them and allowing the edges to hang over the sides.
  • Sprinkle half of the shredded cheese over the tortillas.
  • Add the seasoned ground beef evenly over the cheese.
  • Arrange the tostadas over the beef.
  • Add the remaining cheese, diced tomatoes and shredded lettuce.
  • Place the remaining tortilla in the center over the fillings.
  • Fold the edges of the surrounding tortillas inward over the center tortilla until the entire quesadilla is enclosed.
  • Bake for about 15–20 minutes, or until the tortillas are golden brown and crispy and the cheese is melted.
  • Remove from the oven, let cool for 2–3 minutes, then slice into 6 portions and serve.
