A creamy, no-bake protein tiramisu made with coffee-soaked oats and a silky tofu filling, finished with cocoa powder for an easy dessert inspired by the classic Italian favorite.

Ingredients
  

  • 14 oz silken tofu
  • ½ cup unsweetened strong brewed coffee or espresso-style coffee
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon granulated sugar
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • Mini chocolate chips, optional, for garnish

Instructions
 

  • Place the silken tofu in a fine-mesh strainer and drain for about 10 minutes, removing as much excess liquid as possible.
  • In a small bowl, combine the coffee, rolled oats and 1 teaspoon sugar. Stir and set aside.
  • Add the drained tofu, remaining ½ cup sugar, vanilla extract, almond extract and salt to a blender.
  • Blend until completely smooth and creamy.
  • Divide the coffee oat mixture evenly between four ramekins and press gently into the bottoms.
  • Divide the tofu mixture evenly over the oat layer.
  • Cover and refrigerate for at least 4 hours, or overnight.
  • Before serving, sift cocoa powder over the top.
  • Garnish with mini chocolate chips if desired.
