No-Lettuce Salad

A fresh and filling no-lettuce salad made with garbanzo beans, cherry tomatoes, cucumbers, red onion, balsamic dressing, and cottage cheese. An easy high-protein lunch with 24g of protein and 11g of fiber per serving.

Ingredients
  

  • 15 oz. garbanzo beans, drained and rinsed
  • 10 oz. cherry tomatoes, halved
  • ½ small red onion, minced
  • 5–6 mini cucumbers, sliced into half moons (1 large cucumber will work, too)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground pepper
  • ½ teaspoon everything bagel seasoning, plus more to taste
  • 2 cups 2% cottage cheese, for serving

Instructions
 

  • Add the garbanzo beans, tomatoes, red onion, and cucumbers to a large bowl and toss to combine.
  • Drizzle with the balsamic vinegar, olive oil, and lemon juice. Toss again until the vegetables and beans are evenly coated.
  • Season with sea salt, freshly ground black pepper, and everything bagel seasoning. Toss and adjust the seasoning to taste.
  • Serve the salad over ⅓ cup of cottage cheese per serving. Finish with additional everything bagel seasoning if desired.
  • For meal prep, keep the salad mixture and cottage cheese separate until ready to serve.
