No-Lettuce Salad
A fresh and filling no-lettuce salad made with garbanzo beans, cherry tomatoes, cucumbers, red onion, balsamic dressing, and cottage cheese. An easy high-protein lunch with 24g of protein and 11g of fiber per serving.

15 oz. garbanzo beans, drained and rinsed 10 oz. cherry tomatoes, halved ½ small red onion, minced 5–6 mini cucumbers, sliced into half moons (1 large cucumber will work, too) 2 tablespoons balsamic vinegar 2 tablespoons olive oil 2 teaspoons fresh lemon juice ½ teaspoon sea salt ½ teaspoon freshly ground pepper ½ teaspoon everything bagel seasoning, plus more to taste 2 cups 2% cottage cheese, for serving
Add the garbanzo beans, tomatoes, red onion, and cucumbers to a large bowl and toss to combine.
Drizzle with the balsamic vinegar, olive oil, and lemon juice. Toss again until the vegetables and beans are evenly coated.
Season with sea salt, freshly ground black pepper, and everything bagel seasoning. Toss and adjust the seasoning to taste.
Serve the salad over ⅓ cup of cottage cheese per serving. Finish with additional everything bagel seasoning if desired.
For meal prep, keep the salad mixture and cottage cheese separate until ready to serve.
