1 can full-fat coconut milk 1.5 cups plain granola 4 tablespoons melted coconut oil 1 tablespoons vanilla extract 1 tablespoon maple syrup 1 cup vanilla yogurt 1 cup jarred cherries preferably not packed in heavy syrup
Refrigerate the unopened can of full-fat coconut milk overnight.
Add granola and melted coconut oil to a food processor and pulse until fine crumbs form.
Press the granola mixture evenly into the bottom and sides of a 9-inch pie pan.
Refrigerate the crust for about 15 minutes.
Open the chilled coconut milk without shaking it and scoop out the solid coconut cream.
Add vanilla and maple syrup to the coconut cream.
Beat with a hand mixer on high until soft peaks form.
Gently fold in the vanilla yogurt.
Pour the filling into the chilled crust and smooth the top.
Cover loosely and refrigerate for at least 6 hours, or overnight.
Top with the jarred cherries immediately before serving.
Slice and serve chilled.
