These easy freezer bagel breakfast sandwiches are made with crispy bacon, fluffy eggs, cheddar cheese, and your favorite bagels. Make them ahead for a quick grab-and-go breakfast that can be frozen for up to 60 days.
12 slices bacon, (2 slices per bagel but feel free to make and add more)
8 large eggs
salt and pepper, to taste
6 bagels, (any variety will work)
6 slices cheddar cheese
Instructions
Preheat oven to 400 degrees F. Place bacon on a foil-lined baking sheet and bake for 15-20 minutes or until it's fully cooked and as crispy as you like.
Whisk your eggs and season them with salt and pepper. Cook in a skillet (like you would an omelet) then flip. Slice your eggs into 6 circles for your bagel.
Build your bagel with egg, bacon, and cheese.
Keep in freezer for up to 60 days. To reheat, remove bagels from foil or wrap and wrap in a paper towel and microwave 1-2 minutes. Or place in the oven at 400 degrees for 8-10 minutes.
