Whole-wheat tortillas: I like 8-inch tortillas because they’re big enough to hold a generous amount of filling without becoming impossible to roll.
Seasonings: Garlic powder, onion powder, salt, and pepper keep things simple while giving the eggs plenty of flavor.
How to Make Them
Start by whisking your eggs with the garlic powder, onion powder, salt, and pepper.
Heat a large skillet over medium-high heat and add the eggs. Scramble gently until they’re just cooked through. Don’t take them all the way to dry and rubbery—we’re going to reheat these later.
Remove the skillet from the heat and stir in the salsa, black beans, cooked quinoa, and shredded cheddar.
Now comes the fun part: assembly.
Place about ⅓ cup of filling in the center of each tortilla. Fold the sides toward the middle, then roll the tortilla tightly from the bottom until you have a neat little burrito.
And that’s basically it.
You can eat them immediately, or—and this is what I recommend—make the entire batch and save breakfast for later.

A Few Tips That Make a Big Difference
Don’t overcook the eggs. This is probably the most important one. Eggs that are perfectly cooked today can become dry after reheating tomorrow.
Drain the beans well. Extra liquid is the enemy of a good freezer burrito. Give your black beans a good drain and rinse before adding them.
Don’t overfill the tortillas. I know it’s tempting. You made all this delicious filling, so obviously you want to put as much as humanly possible into each tortilla. Resist. About ⅓ cup makes them much easier to roll and keeps them from falling apart.
Let the filling cool slightly. If you’re freezing the burritos, let the filling cool for a few minutes before assembling. This helps prevent excess condensation inside the wrapped burritos.
Want crispy edges? After reheating, throw the burrito into a skillet for a couple of minutes on each side. The tortilla gets lightly crisp while the inside stays warm and cheesy.
Easy Ways to Change Them Up
This recipe is really just a starting point.
For more vegetables, add sautéed bell peppers, onions, mushrooms, spinach, or even leftover roasted vegetables. Just cook them first and remove excess moisture.
For more heat, use hot salsa, add diced jalapeños, or mix in a little chipotle.
Black beans can easily be swapped for pinto beans, and quinoa can be replaced with cooked brown rice.
And if you’re not strictly vegetarian, some cooked turkey sausage, bacon, or chicken would turn these into an entirely different breakfast.
For a vegan version, you can use a tofu scramble and your favorite dairy-free cheese.
How to Store and Reheat
For refrigerator meal prep, wrap each burrito individually and store them in the fridge for up to 3–4 days.
For longer storage, wrap each burrito tightly and place them in a freezer-safe bag or container. They’ll keep for up to 3 months.
When you’re ready to eat one, unwrap it and place it on a microwave-safe plate. Wrap it loosely in a paper towel and microwave until heated through, usually around 1–3 minutes, depending on whether it’s refrigerated or frozen and the power of your microwave.
For an even better texture, microwave it until hot and then crisp it in a skillet for a few minutes.
