These Freezer Breakfast Sandwiches Will Save Your Mornings

There are mornings when making breakfast sounds completely reasonable.

You wake up, make some coffee, cook some eggs, toast some bread, clean the pan…

And then you look at the clock and realize you have approximately seven minutes to leave the house.

This is why I love freezer breakfast sandwiches.

You make a batch once, throw them in the freezer, and suddenly breakfast is basically handled for the next few weeks. When you’re ready for one, it goes from frozen to hot and cheesy in about a minute.

No frying pan. No chopping. No thinking.

Just microwave, unwrap, eat.

And honestly, having a hot breakfast waiting for you in the freezer feels like a pretty unfair advantage.

Why You’ll Want These In Your Freezer

The biggest reason is obvious: they save a ridiculous amount of time.

But they’re also much better than the sad little frozen breakfast sandwiches you might grab at the grocery store.

1. Bake the eggs

Preheat your oven to 375°F.

Whisk the eggs, milk and salt together until well combined.

Spray a 9×13-inch baking dish with cooking spray and pour in the egg mixture.

Bake for 25–30 minutes, until the edges are puffed and the center is completely set.

Let the eggs cool before cutting.

2. Cook the bacon

While the eggs are baking, place the bacon on a foil-lined baking sheet.

Bake it on the upper rack for about 15–20 minutes, or until it’s as crispy as you like it.

Transfer it to a paper towel-lined plate and let it cool.

Then break each slice in half.

3. Toast the English muffins

Split the English muffins and place them cut-side-up on a baking sheet.

Toast them in the oven for a few minutes until the edges are lightly crisp.

Don’t take them too far—we still want some softness in the middle.

4. Cut the eggs

Transfer the baked eggs to a cutting board.

Use a large biscuit cutter or a drinking glass that’s roughly the same size as your English muffins to cut out six egg rounds.

You’ll have some egg scraps left behind.

Do not throw them away.

Eat them, put them in a salad, throw them into a stir-fry, or use them to make extra sandwiches if you have more English muffins.

5. Build the sandwiches

Lay out the bottom halves of your English muffins.

Add an egg round, a slice of cheese and two pieces of bacon.

Finish with the top half of the English muffin.

That’s it.

You’ve officially meal-prepped breakfast.

How To Freeze Them

Let everything cool completely before wrapping the sandwiches.

Wrap each sandwich individually in aluminum foil, then place them together in a freezer-safe bag or container.

Write the date on the bag so you don’t eventually end up staring at a mysterious foil-wrapped object wondering what year it came from.

These sandwiches are best used within one month for the best texture.

How To Reheat Them

Take one sandwich straight from the freezer and unwrap it.

Place it on a microwave-safe plate lined with a paper towel.

Microwave on high for 1–1½ minutes, or until the egg is hot and the cheese is melted.

Let it sit for a minute before eating.

For an even better English muffin texture, remove the top half before microwaving and toast it separately while the rest heats.

It’s an extra step.

A Few Tips That Make A Big Difference

Let the eggs cool before cutting. They’ll be easier to handle and much less likely to fall apart.

Don’t overbake the eggs. You want them just set. Overcooked eggs are already unpleasant, and freezing isn’t going to improve them.

Cool the sandwiches before freezing. Trapping steam inside the wrapping can lead to soggy bread.

Wrap individually. This makes grabbing one sandwich from the freezer incredibly convenient.

Use a paper towel when microwaving. It absorbs excess moisture and helps keep the English muffin from becoming soggy.

How Long Do They Last?

In the freezer, use them within about 1 month for the best quality.

If you’d rather keep them in the refrigerator, store the components or assembled sandwiches in an airtight container for up to 5 days.

For longer-term storage, freezing is the way to go.
