This 90-Second Chocolate Lava Cake Has 27g of Protein

There are two kinds of chocolate cake.

The kind you make when you have time, ingredients everywhere, and somehow half your kitchen covered in flour.

And then there’s this one.

This cottage cheese lava cake takes about 90 seconds in the microwave, uses a handful of ingredients, and somehow comes out warm, chocolatey and ridiculously gooey in the middle.

And yes, there’s cottage cheese in it.

I know.

But once it’s mixed into the batter, you don’t get a mouthful of cottage cheese. You get a rich chocolate cake with a molten center—and 27 grams of protein to go along with it.

Honestly, that’s a pretty good trade.

Why This Lava Cake Works

The secret here isn’t some complicated baking technique. It’s simply about getting the texture right.

The cottage cheese gives the cake moisture and protein, while the protein powder adds even more protein and structure. Cocoa powder brings the deep chocolate flavor, and chocolate chips melt into the middle to create the lava.

And because we’re making a single serving, you don’t have to turn on the oven or wait around for an entire cake to bake.

Mix. Microwave. Wait one minute. Eat.

That’s my kind of baking.

Ingredients You Need

Cottage cheese. This is the unusual ingredient, but it works surprisingly well. Full-fat cottage cheese gives you a richer result, while low-fat works perfectly fine too. If you want an ultra-smooth cake, blend it first.

Cocoa powder. Use unsweetened cocoa powder for a deep chocolate flavor. Dutch-process cocoa will give you an even darker, richer result.

Chocolate protein powder. This is where a big chunk of the protein comes from. Use a protein powder you actually like because its flavor will be noticeable in the finished cake.

Egg. The egg helps bind everything together and gives the cake enough structure to hold its shape while keeping the middle soft.

Chocolate chips. Don’t skip these. They melt while the cake cooks and create those little pockets of molten chocolate that make this a lava cake instead of just a protein mug cake.

How To Make It

1. Mix the batter

Add the cottage cheese, cocoa powder, chocolate protein powder and egg to a microwave-safe mug or small bowl.

Stir until everything is well combined.

If you want the smoothest possible texture, blend the mixture for about 20 seconds before transferring it to your mug.

2. Add the chocolate

Fold the chocolate chips into the batter.

For an especially gooey center, push a few of the chocolate chips toward the middle.

That’s where the good stuff happens.

3. Microwave

Microwave on high for about 90 seconds.

The edges should look cooked while the center should still have a slight jiggle.

That’s what you want.

If you microwave it until the entire thing looks completely set, congratulations—you’ve made a chocolate sponge.

The lava is gone.

4. Let it rest

Take it out and let it sit for about one minute.

I know.

You’ve already waited 90 seconds.

But give it the minute.

The cake continues setting slightly as it rests, and the center turns into that thick, gooey chocolate texture you’re after.

The Biggest Trick: Don’t Overcook It

This is probably the most important thing to know about this recipe.

The center should still look slightly underdone when you take it out.

Microwaves vary wildly, so your cake might need 75 seconds or it might need 100.

Start around 80–90 seconds and check it.

If the edges are set and the center still jiggles, you’re done.

If it looks completely firm from edge to edge, you’ve gone too far.

Want An Even Smoother Cake?

Blend the cottage cheese before mixing the batter.

A quick blitz in a blender or food processor gets rid of the little curds and gives you a much more traditional cake texture.

Personally, I don’t mind skipping this step because I’m lazy and the cake still tastes great.

But if you’re particular about texture, blend it.

Easy Variations

Peanut Butter Lava Cake

Put a teaspoon of peanut butter in the center of the batter before microwaving.

When you cut into it, you’ll get warm peanut butter instead of—or alongside—the melted chocolate.

Excellent decision.

Double Chocolate

Add another tablespoon of chocolate chips to the batter and sprinkle a few on top before microwaving.

There is no such thing as too much chocolate here.

Probably.

Vanilla Lava Cake

Use vanilla protein powder instead of chocolate and swap the semi-sweet chocolate chips for white chocolate chips.

Different dessert entirely.

Chocolate Berry

Add a few raspberries or sliced strawberries on top after cooking.

The acidity from the berries cuts through the richness of the chocolate really nicely.

What To Put On Top

You can absolutely eat this straight from the mug.

But if you want to make it feel more like an actual dessert:

  • Vanilla ice cream for the hot-and-cold combination
  • Greek yogurt if you want even more protein
  • Whipped cream for something lighter
  • Peanut butter for a salty-sweet finish
  • Fresh berries for some freshness
  • Flaky sea salt to make the chocolate flavor pop

And yes, you can add more chocolate.

I won’t stop you.

Can You Make It Ahead?

Technically, yes.

But fresh is definitely better.

The molten center is at its best right after cooking, and it becomes firmer as it sits.

If you have leftovers, refrigerate them in an airtight container for up to 2 days and microwave for 20–30 seconds before eating.

It won’t be quite as lava-like, but it’ll still make a pretty good chocolate cake.

The Bottom Line

A chocolate lava cake that takes 90 seconds and gives you 27 grams of protein sounds suspiciously good.

And somehow, it actually works.

The cottage cheese disappears into the batter, the chocolate chips melt into the center, and the microwave does basically all the cooking.

So the next time a chocolate craving shows up at 10 p.m., you don’t need to bake an entire cake.

You need a mug.

And 90 seconds.
